Raw Pralines

Raw pralines are a wonderful way to pamper or amaze your loved ones with a little something from the raw food kitchen.

With a simple basic recipe consisting of dried fruits, nuts and spices, you can easily prepare 25 to 30 tasty balls. From pistachio to chocolate brownie to coconut strawberry – the variety of flavors knows no bounds.

Choose between delicious variations such as pistachio almond with a touch of lemon juice or chocolate brownie with Medjool dates and cocoa. For fans of coconut, there are tempting options such as carob or white Raffaello with almond flour and a peeled almond center.

RAW PRALINES
​ NUTS I DRIED FRUITS


Basic recipe for 25 – 30 balls

  • 150 g dried fruits (dates, raisins, apricots, figs)
  • 150 g nuts (almonds, walnuts, hazelnuts, cashews, Brazil nuts)
  • Spices such as cinnamon, vanilla, raw cocoa

Mix all ingredients, add a little water if necessary. Form balls and then roll them in cocoa, chopped nuts or sesame seeds.

I used the Personal Blender for all variations.

​ FLAVOR VARIATIONS


PISTACHIO I GREEN

  • 75 g pistachios and 75 g almonds
  • 150 g apricots
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla
  • 50 g ground pistachios

Grind the nuts in a food processor, add the apricots, lemon juice and vanilla and mix until the dough clumps. Form balls and roll in ground pistachio.



À LA CHOCOLATE BROWNIES

  • 75 g almonds and 75 g walnuts
  • 150 g Medjool dates
  • 20 g cacao
  • 1/2 tsp cinnamon

For preparation, see above. Roll formed balls into raw cocoa and cinnamon mixture.

​ RAW PRALINES


CAROB BALLS

Recipe for 25 – 30 balls

    • 100 g shredded coconut
    • 200 g Medjool dates
    • 30 g carob
    • 1/2 tsp cinnamon
    • 1 pinch vanilla

Grind the coconut flakes into flour in a small blender. Process all ingredients in a food processor until a sticky mass is formed. Form balls and roll in carob. Cool in the refrigerator.

WHITE RAFFAELLO PRALINES

 Recipe for 20 balls

    • 150 g shredded coconut
    • 2 tbsp honey or other sweetener
    • 1 tbsp almond flour or almond butter
    • 1 tbsp coconut oil
    • 1 pinch vanilla
    • 20 almonds, peeled

Grind the coconut flakes into flour and place in a bowl. Mix by hand with sweetener, almond flour and coconut oil and knead until a dough is formed. If necessary, cool the mixture briefly to make it easier to shape. Form balls with an almond in the center of each. Roll in shredded coconut.


COCONUT STRAWBERRY DREAM

 Basic recipe for 20 balls

    • 150 g shredded coconut
    • 1-2 tbsp honey or other sweetener
    • 1 tsp lemon juice
    • 1 tbsp coconut oil
    • Freeze-dried strawberries

For preparation, see above. For the red outer layer, grind freeze-dried strawberries in a small blender and roll the balls in it. Raspberries are also very suitable.
