Mushrooms Stuffed with Pesto

Mushrooms stuffed with pesto always go well with a salad and are a great dish to bring to a party or potluck.

All you need are mushrooms and a delicious pesto. If you want to make it quickly, you can buy ready-made pesto. But of course, homemade basil pesto tastes even better and is worth a little extra work.



  • 10-15 mushrooms, depending on size
  • 2 tablespoons tamari (soy sauce)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice


  • 1 bunch basil
  • 1/2 cup peeled hemp seeds
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon yeast flakes
  • 1 pinch salt


  • Clean mushrooms and carefully twist out the stalks.
  • Mix the tamari, olive oil and lemon juice in a bowl and marinate mushrooms for about 30 minutes.


  • Put herbs and seeds in a food processor and finely chop, do not puree.
  • Add remaining ingredients and blend again for 15 seconds – your pesto is ready!

Remove the mushrooms from the marinade, drain, fill with pesto and arrange decoratively.
