Blueberry Overnight Oats

If you’re looking for a filling breakfast, blueberry overnight oats might be a great idea for you. Oats are a great way to start the day and because most of the preparation is done the night before, they’re perfect for limited time in the morning.

Oats are one of the best tolerated grains within the raw vegan diet

  • They’re rich in vitamins and minerals, contain plenty of B vitamins, including biotin (vitamin B7) and the minerals calcium, iron, potassium, copper, magnesium, manganese, phosphorus, selenium, silicon and zinc.
  • They can support the balance of amino acid supply very well, because they’re abundant in essential amino acid lysine, which tends to be somewhat underrepresented in a plant-based diet.
  • They contain the soluble dietary fiber beta-glucan. Beta-glucans regulate blood sugar, lower cholesterol and activate the immune system. They improve the feeling of satiety and are beneficial for intestinal health.
  • They’re considered virtually gluten-free.

  • They contain many minerals such as iron, calcium, magnesium and potassium, vitamins C, A, B, E and beta-carotene, as well as abundant fiber, which has a beneficial effect on digestion.

 

BLUEBERRY OVERNIGHT OATS


for 1 large or 2 small portions

INGREDIENTS

  • 1 cup oats (ideally from sprouts oats)
  • ½ cup water
  • 1 pinch vanilla
  • 1 cup blueberries
  • 1 tablespoon almond butter
  • 1 tablespoon date syrup

PREPARATION

  1. In the evening, press oats through a flake press (if you have one and are using unpressed oats), mix with water and let rest overnight.
  2. If using frozen organic blueberries, thaw them overnight.
  3. In the morning, stir in almond butter and date syrup and top with blueberries.
