Raw Coconut Yogurt

We’ve come to enjoy this raw coconut yogurt the most, after countless attempts. You have to experiment a bit to make yogurts that taste really good. But we are sure, with a little effort, you will succeed.

Raw coconut yogurt:

  • Is vegan and lactose free
  • Is probiotic
  • Contains saturated fatty acids of medium-chain lauric acid

Below we present two different ways of preparation

  • Raw coconut yogurt made from coconut butter and coconut oil
  • Raw coconut yogurt from young coconut flesh

 

RAW COCONUT YOGURT

FROM COCONUT BUTTER AND COCONUT OIL


INGREDIENTS

  • 3 tablespoon coconut butter
  • 2 tablespoon coconut oil
  • Juice of ½ lemon
  • 2 cups water
  • ½ teaspoon probiotic powder
  • 1 pinch vanilla
  • 1 teaspoon guar gum

PREPARATION

  1. Melt coconut butter and coconut oil in a water bath and blend with lemon juice and vanilla in a powerful blender to a creamy mass.
  2. Add probiotic powder and guar gum and blend again briefly.
  3. Pour the mass into a glass and cover with a cloth and leave to rest at room temperature for 12-24 hours.
  4. Store in the refrigerator, this gives the yogurt more firmness.

Guar gum is extracted from the guar bean, a legume. It serves as a thickener, is very soluble in water and is particularly suitable for raw vegan preparation, as it binds without the addition of heat.

For those who like to drink young coconut water, the following recipe could also be lucrative. Inside young coconuts is a thin layer of tender coconut meat, which can be wonderfully processed into coconut yogurt.

RAW COCONUT YOGURT

FROM YOUNG COCONUT FLESH


INGREDIENTS

  • Coconut flesh from 4 coconuts
  • 1 cup coconut water
  • Juice of ½ lemon
  • ½ teaspoon probiotic powder

PREPARATION

  1. Scrape the flesh out of the coconuts.
  2. Stir probiotic powder into coconut water.
  3. Mix all ingredients for about 1 minute on high speed in a powerful blender to a creamy consistency.
  4. Let coconut cream rest for 12-15 hours at room temperature.
  5. The next morning the yogurt is ready and can be stored in the refrigerator for 4-5 days.

Other tips:

  • After you’ve prepared the first portion of yogurt with yogurt cultures, you can take 2 tablespoons of it and prepare a new yogurt with it. This will work for about 3 – 4 rounds as it will ferment weaker over time.
  • If you prepare the coconut flesh in a high-powered blender, you should use the coconut flesh of at least 3 coconuts at once, as the blending process does not work well with a small amount. The pulp sticks to the wall of the blender and doesn’t whisk sufficiently.
  • For a smaller amount, we recommend using a personal or smaller blender.
  • With up to 15 hours of ripening time you’ll get a mild yogurt.
  • The longer the ripening time, the more sour the coconut yogurt will be.

Why is this yogurt a great addition to your diet?

Imagine- there are about ten times as many bacteria in our intestines as there are cells in our entire bodies. With fermented products we can influence our intestinal environment very positively and strengthen the good bacteria. A healthy intestinal environment strengthens our digestion, is beneficial for our mineral and vitamin absorption and our immune system.

Of course, you can mix and match this yogurt to your heart’s content – with berries, fruits or granola.
