Raw Buckwheat Porridge

This raw buckwheat porridge is a wonderfully delicious breakfast dish and suitable for all those who love a filling and warming meal in the morning.

Just right for your constitution

You may have been wondering for a while how it is that we all have such different food preferences. Your friend skips breakfast altogether, your partner likes something hearty in the morning, and you just feel so good with a warming porridge. How can this be? A very helpful explanation can be found in the philosophy of Ayurveda and in the classification into the 3 Doha types Vata, Pitta and Kapha.

Buckwheat is:

  • Gluten and lectin free
  • Rich in minerals, vitamins and high-quality protein
  • Beneficial for high blood pressure and diabetes
  • A great alternative in the case of gluten intolerance

RAW BUCKWHEAT PORRIDGE
WITH RASPBERRIES


for two servings

INGREDIENTS

  • 1 cup buckwheat
  • 2-3 dates
  • 1 pinch vanilla
  • 1 cup raspberries, frozen if necessary
  • Topping- raspberries and shredded coconut

PREPARATION

  1. Soak buckwheat in water overnight.
  2. In the morning, drain and rinse the grains in a sieve.
  3. Blend buckwheat with raspberries, dates and vanilla for a few seconds or longer, depending on how fine or chunky you want the porridge. Add water if necessary.
  4. Top with raspberries and shredded coconut.

Tip

Peeled hemp seeds or buckwheat seedlings are a great topping as well.

RAW BUCKWHEAT PORRIDGE
WITH MULBERRIES


for two servings

INGREDIENTS

  • 1 cup buckwheat
  • 2 apples
  • ½ cup mulberries
  • 1 teaspoon cinnamon

PREPARATION

  1. Soak buckwheat in water overnight.
  2. In the morning, drain and rinse the grains in a sieve
  3. Puree with mulberries, water and cinnamon.
  4. Pour into a bowl and top with mulberries and shredded coconut.

Warming spices

To warm yourself from the inside, you can also add cardamom, anise and turmeric.
