Homemade Date, Fig and Apple Mustard

Making your own date, fig or apple mustard is a great way to get to know mustard better. That’s definitely how we felt when creating these recipes. We now know what’s in a mustard and have discovered its health benefits!

Mustard has played an important role in kitchens for over 3,000 years and is considered an ancient remedy. Due to its essential oils, it has a circulatory, diaphoretic and antibiotic effect and can counteract colds or, in the form of compresses or baths, alleviate ailments such as arthritis, rheumatism or bronchitis.

There are white, black and light brown mustard seeds, with the black seeds being the most pungent. The glycosides sinalbin and sinigrin are responsible for the pungency. These glycosides only release their pungent essential oils (isothiocyanates) when the seeds break open and come into contact with liquid. Note- the pungent taste has an appetizing and digestive effect 😉

Mustard seeds are usually ground or finely mortared and mixed with vinegar, sugar and various spices. Both Dijon mustard, medium hot mustard and sweet mustard contain sugar. This fact makes homemade mustard particularly special, because now you can decide on the ingredients!

DATE MUSTARD


for an 8oz glass

INGREDIENTS AND PREPARATION

  • 2 tablespoons light brown mustard seeds
  • 2 tablespoons apple cider vinegar
  • 6 dates
  • 1 teaspoon turmeric, 1 pinch salt
  1. Soak mustard seeds and dates separately in water overnight. Rinse mustard seeds in the morning. Keep the sweet date water for seasoning.
  2. Puree everything together in a blender and season with salt and date water, if desired.
  3. Pour into a jar and store in the refrigerator.

After only a few days the mustard develops its full aroma and is long-lasting due to its antibiotic properties.


APPLE MUSTARD

A milder and sweeter variation 


for an 8oz glass

INGREDIENTS AND PREPARATION

  • 2 tablespoons light brown mustard seeds
  • 2 tablespoons apple cider vinegar
  • 1 apple
  • 6 dates
  • 1 teaspoon turmeric, 1 pinch salt
  1. Soak mustard seeds and dates separately in water overnight. Rinse mustard seeds in the morning. Keep the sweet date water for seasoning.
  2. Puree everything together in a blender and season with salt and date juice to taste.
  3. Pour into a jar and store in the refrigerator.

FIG MUSTARD


for an 8oz glass

INGREDIENTS AND PREPARATION

  • 2 tablespoons light brown mustard seeds
  • 2 tablespoons apple cider vinegar
  • 5-6 dried figs
  • 1 pinch salt
  1. Soak mustard seeds and figs separately in water overnight. Rinse mustard seeds in the morning. Keep the sweet fig water for seasoning.
  2. Puree everything together in a blender, season with salt and fig water if needed.

A longer shelf life

The mustard oil glycosides contained in the mustard seeds have an antibacterial effect. This means that your homemade mustard can be kept in the refrigerator for several weeks.

 

  • Mustard can be used to refine many dishes, especially salad dressings.
  • Prepared in larger quantities, homemade mustard is ideal for storage.
  • Filled in pretty jars, it serves wonderfully as a gift!
