Chlorophyll cucumber spaghetti is a vital substance-rich combination in perfection.
Cucumbers belong to the gourd family. Besides the high water content, they contain abundant vitamins and minerals. They’re also very rich in enzymes. Peptidases are enzymes that can break down proteins and aid in the digestion of protein-containing products such as the spirulina, hemp and sesame seeds in this recipe. Hemp seeds provide valuable protein and omega-3 fatty acids and sesame seeds are super rich in calcium and magnesium.

PREPARATION
- Process cucumbers into noodles using a spiralizer.
- Add spirulina and mix well until everything is evenly distributed and the noodles look juicy green.
- Mix in hemp and sesame seeds and sprinkle seaweed on top. Seaweed gives the noodles another natural, slightly salty note and rounds off the dish nicely.
The addition of spirulina and wakame algae gives this recipe its absolute power of vital substances and a special flavor.
Algae
Algae are divided into freshwater and marine algae and, based on their size, into micro- and macroalgae. They’re considered the most chlorophyll-rich foods and contain an abundance of minerals, trace elements and vitamins.
Freshwater algae
Spirulina
Spirulina is a microscopic cyanobacterium and is also known as blue-green algae. It contains a particularly broad spectrum of nutrients and, in addition to green chlorophyll, has a special blue pigment, phycocyanin, which is considered a very powerful antioxidant.
It’s mostly grown in large water farms in glass tube systems filled with spring water, allowing sunlight to reach the algae from all sides. Naturally, it grows in alkaline salt lakes in Central Africa and South America.
Chlorella
Chlorella is a microscopic green alga that lives in fresh water. It owes its name to its natural occurrence of chlorophyll. It has particularly excellent abilities in absorbing heavy metals, and it’s also said to contain bioavailable vitamin B12.
Spirulina and Chlorella algae have only low iodine values.
Marine algae
Large-leaved seaweeds such as arame, kombu, hijiki, dulse and wakame are particularly rich in iodine. The iodine content of the algae can vary greatly, not only from variety to variety, but also depending on the harvest time and place of growth.
This dynamic dish features a combination of spirulina and a seaweed flake mix. Of course you can also prepare the recipe with chlorella and a seaweed of your choice.
