Cashew Cream Cheese

A cashew cream cheese is the perfect spread or tasty addition to a salad. So we decided to prepare a raw vegan cream cheese based on cashews and tried out several variations.

How does it taste best? Is the quick version enough or should it be probiotic?

 

Below you’ll find these variations:

  • Quick herbal cashew cream cheese
  • Probiotic herbal cashew cream cheese
  • Tzatziki cashew cream
  • Tomato and olive cashew cream

QUICK HERBAL CASHEW CREAM CHEESE


INGREDIENTS

  • 1 cup cashews
  • 60ml water
  • 1–2 teaspoons lemon juice
  • 1 tablespoons yeast flakes
  • Some sea salt, a pinch of pepper and garlic powder, if desired
  • Various herbs (chives, mint, dill, basil, etc.)

PREPARATION

  • Soak cashews in water for at least 2 hours. Drain and briefly rinse.  
  • Mix with water and remaining ingredients in a small blender and season to taste. Let cool in the fridge.

Use just enough water for a fine cream to form.

 


PROBIOTIC HERBAL CASHEW CREAM CHEESE


INGREDIENTS

  • 1 cup cashews
  • ½ cup sauerkraut juice or ½ teaspoon probiotic powder + ½ cup of water
  • 1–2 teaspoons lemon juice
  • Some sea salt, a pinch of pepper and garlic powder, if desired
  • Various herbs (chives, mint, dill, basil, etc.)

PREPARATION

  • Soak cashews in water for at least 2 hours. Drain and briefly rinse.  
  • Mix with kvass or sauerkraut juice in a small blender and let rest in a room temperature area for 12 hours, preferably overnight.
  • Season to taste with lemon, spices and herbs and chill in the fridge.

TZATZIKI VARIATION

Add 1 teaspoon olive oil, finely diced cucumber and garlic. In the original tzatziki there are no herbs or dill, but sometimes there is some mint.


TOMATO & OLIVE VARIATON

Add sun-dried tomatoes and olives, very finely chopped or blended briefly in a small blender, and top the cream cheese with basil.

Conclusion

The quick version tastes great! The yeast flakes give the cashew cream a delicious cheese flavor.

With the probiotic version, you can taste the fermentation process. Also, the health benefits and gut-friendly aspect count here.  And you should definitely try the tzatziki and tomato/olive variants – they taste great too!
