Breakfast Granola

This breakfast granola is a must for the whole family. It contains no grain, but valuable seeds, crunchy nuts, lots of coconut and delicious apple chips! The sprouted seeds and nuts are what make it so special.

Soaking triggers the germination process

  • This brings the nuts and seeds to life and a process of transformation occurs
  • Acids and inhibitors are largely broken down
  • Proteins are transformed into easily digestible amino acids
  • The nutrient content increases
  • Nuts and seeds become alkaline

 BREAKFAST GRANOLA


for 2.5 pounds of granola

INGREDIENTS

  • 2 cups buckwheat
  • 2 cups sunflower seeds
  • 2 cups shredded coconut
  • 4 apples, finely chopped
  • ½-1 cup chopped dates
  • ½ cup almonds
  • 2-3 tablespoons cinnamon

PREPARATION

  1. Soak buckwheat, sunflower seeds and almonds separately in water overnight, drain and rinse in the morning. Leave buckwheat and sunflower seeds to sprout in large sieves throughout the day. Continue to activate the almonds covered in water by renewing the water once. Small spikes in the tips show that the germination process has been initiated.
  2. When germinated, roughly chop almonds and finely chop apples or shred in a food processor.
  3. Put all ingredients in a large bowl, mix well and spread out on drying foil. Dry in a dehydrator for approx. 8-12 hours at 105º F. Store in an airtight jar. 

TIP

If you process the apples in the food processor to a coarse pulp, it will provide more stickiness and when dried will create a greater crunch.

Create your favorite granola

If you want your granola to be less sweet and a little fruitier, you can increase the apple content and omit the dates, or swap out the nuts and seeds to suit your preferences.

INGREDIENTS

  • 3 cups buckwheat
  • 1 cups sunflower seeds
  • 3 cups shredded coconut
  • 6-8 apples
  • 2 tablespoons cinnamon
  • ½ cup brazil nuts
  • 1 teaspoon vanilla
