Strawberry Chia Pudding

This strawberry chia pudding is a perfect way to start your day or enjoy as a nourishing snack in between. Thanks to the combination of fresh strawberries, plant-based milk, and fiber-rich chia seeds, it provides your body with antioxidants, plant-based protein, and valuable omega-3 fatty acids — all without refined sugar or additives.

Whether for breakfast, dessert, or a healthy treat: this pudding is easy to prepare in advance, completely vegan, and wonderfully refreshing when served chilled on warm days.

STRAWBERRY CHIA PUDDING


Ingredients

Serves 2
        •       250 ml almond milk
        •       50 g chia seeds
        •       1 tbsp date syrup or alternative sweetener
        •       A pinch of vanilla
        •       100 g coconut yogurt
        •       200 g strawberries

Preparation

1. Blend 100 g of strawberries with almond milk, date syrup, and vanilla until smooth. (If using frozen strawberries, allow them to thaw first.)
2. Pour the strawberry milk into a large bowl, add the chia seeds, and stir well until the mixture begins to thicken. For a creamier texture, optionally stir in a tablespoon of coconut yogurt.
3. Cover the bowl and refrigerate for at least 2 hours or overnight.
4. Serve as is or garnish with more yogurt, fresh strawberries, or your favorite toppings.

Tip:

Homemade Almond Milk: Blend 2 tbsp almond butter with 500 ml water and a touch of vanilla for 30 seconds – done!

Want to get the most out of the omega-3 fatty acids in chia seeds? Grinding or crushing the seeds before mixing them in can improve absorption. This makes it easier for your body to assimilate the fats and micronutrients they contain.

You have two options — grind the chia seeds before adding them or blend the finished pudding thoroughly once it has set. Both methods work well. Try both and see what suits your taste and digestion best.
