Raw vegan patties – how contradictory is that? But in fact, they do live up to their name. These little rounds look like patties and taste like they’re fried, but they’re of raw food quality.
We love them- they provide plenty of protein, are filling and are ideal as a side dish in Wraps or Raw Vegan Burgers and are an enrichment in Salad Bowls!
RAW VEGAN PATTIES
Sunflower-Hemp-Walnut-Parsley
makes about 25 patties, depending on size
INGREDIENTS
- 1 cup sunflower seeds
- ½ cup shelled hemp seeds
- ½ cup walnuts
- ½ bunch parsley
- 1 spring onion
- ½ red bell pepper
- 4 mushrooms
Soy sauce for marinating
- 1 teaspoon miso paste
- 2 dates
- Juice of ½ lemon
- 1 teaspoon majoram
- 1 teaspoon paprika
PREPARATION
- Cut bell pepper and mushrooms into small pieces and marinate in soy sauce.
- Finely chop parsley and spring onion.
- Blend miso, dates and lemon juice in a small blender.
- Chop sunflower seeds, walnuts and hemp seeds in a food processor, put in a bowl with the rest of the ingredients and knead by hand. Season to taste and shape into patties.
Tip: If the dough isn’t sticky enough, you can knead in one or two teaspoons of ground flaxseeds or psyllium husks.
Dry in dehydrator for 3-4 hours on each side.
