This Raw Sauerkraut Carrot Bread is easy to prepare, very tasty and healthy!
Sauerkraut not only contains numerous vitamins, but also probiotic bioactive lactic acid bacteria. Together with the fiber in flaxseed, it has a positive effect on digestion. Buckwheat is gluten-free and contains high-quality protein, and sunflower seeds are rich in folic acid and magnesium. Black sesame is the original form of sesame. It tastes similar to the golden variety and has an even more valuable composition in terms of content.

- Variation with germinated seeds- during germination, the nutrient content explodes and the bread becomes alkaline!
RAW SAUERKRAUT CARROT BREAD (QUICK)
INGREDIENTS
- 6-10 carrots depending on size
- 2 cups sauerkraut
- ½ cup of water
- 1 cup buckwheat
- 1 cup sunflower seeds
- ½ cup golden flaxseeds
- ¼ cup black sesame
- Ground cumin, possibly some salt
PREPARATION
- Finely chop carrots (cut into small pieces), sauerkraut and water in a food processor.
- Grind the sunflower seeds, flaxseed and buckwheat separately in a blender.
- Knead all ingredients into sauerkraut and carrot mixture with a wooden spoon or by hand.
- Depending on how moist and salty the sauerkraut is, add a little more salt and water. A spreadable mass should form.
- Season with cumin, spread on 2–3 drying foils and dry in the dehydrator.
Turn over after about 7 hours and continue drying until well dried. You can keep them in a tin box.
RAW SAUERKRAUT CARROT BREAD (WITH GERMINATED SEEDS)
INGREDIENTS
- 6-10 carrots depending on size
- 2 cups sauerkraut
- ½ cup of water
- 1 cup buckwheat
- 1 cup sunflower seeds
- ½ cup golden flaxseeds
- ¼ cup black sesame
- Ground cumin, possibly some salt
PREPARATION

- Soak all seeds separately covered with water overnight.
- In the morning, rinse, drain and let germinate in separate sieves for another 6 hours.
- Finely chop the carrots (cut into small pieces) and sauerkraut in a food processor.
- Rinse the buckwheat, sunflower seeds and flax seeds again, drain well and puree in a blender.
- Add puree to sauerkraut and carrot mixture and fold in black sesame seeds.
- Add more water if needed. A spreadable mass should form.
- Depending on how salty the sauerkraut is, add a little more salt and season with cumin, spread on 3 drying foils and dry in the dehydrator.
