Raw Broccoli Balls

Raw broccoli balls are not only quick to prepare, they’re also full of healthy nutrients, taste delicious and are filling. With just a few ingredients, including fresh broccoli, protein-rich hemp seeds and creamy cashews, you can have a delicious snack or a filling side dish for a salad bowl in no time.

These broccoli balls are also ideal for meal prep and can be kept in the fridge for up to 4-5 days. Simple, delicious and perfect for a healthy diet – these little powerhouses should not be missing from any kitchen!

RAW BROCCOLI BALLS


INGREDIENTS

  • 250 g broccoli
  • 60 g hemp seeds
  • 40 g cashews
  • 1 tbsp yeast flakes
  • 1 – 2 tsp lemon juice
  • 1 pinch of salt

PREPARATION

  1. Wash or rinse broccoli, cut into small pieces and mix with remaining ingredients in a food processor until mixture has become creamy.
  2. Form balls and store in the fridge.

Tip:

  • Nuts and seeds can be varied according to taste.
  • For a little more creaminess, cashews can be replaced with 1/2 an avocado.
  • Your perfect meal prep: broccoli balls can be kept in the fridge for 4-5 days.

Health aspects

Broccoli

Broccoli belongs to the cruciferous vegetable family and is packed with a variety of valuable nutrients, making it a real superfood. These include:

  • Vitamins: Broccoli is an excellent source of vitamin C, which strengthens the immune system and supports collagen production for healthy skin. It also contains vitamin K, which is essential for bone health and blood clotting.
  • Minerals: It provides important minerals such as calcium and magnesium, which are important for strong bones and healthy muscle function, as well as iron, zinc and potassium, which support oxygen transport, immune function and cell health.
  • Antioxidants: Broccoli is rich in lutein and zeaxanthin, which promote eye health and may reduce the risk of age-related macular degeneration.
  • Phytochemicals: Broccoli is also rich in kaempferol (1), a powerful flavonoid with anti-inflammatory properties, and glucoraphanin, which is converted to sulforaphane (2) during digestion. Sulforaphane is being studied extensively for its potential anti-cancer, detoxification and anti-inflammatory effects.

Hemp seeds

Hemp seeds add other valuable nutrients to the dish. They contain all nine essential amino acids, making them a complete protein source. They are also rich in omega-3 fatty acids, which are essential for heart health, reducing inflammation and supporting brain function, as well as important minerals such as magnesium, zinc, iron and potassium, which support heart health, muscle function and the immune system.
