Raw Apple Pie

Anyone who’s tried this raw apple pie will never miss a baked apple pie with whipped cream again!

A raw apple pie should definitely be part of your repertoire. Apples are regional to many areas and together with the marzipan-tasting base and cashew cream, a wonderfully delicious combination is created.

It requires three steps and is a bit time-consuming to prepare. But the combination of almond, cream and apple is simply delicious and we think it’s worth the wait!

As a quicker variant, you can also prepare the pie without cashew cream.

RAW APPLE PIE


for a springform pan with a diameter of 10 inches

ALMOND CRUST

  • 2 cups almonds (optionally soaked overnight and dried again)
  • 6-8 dates (soaked in water for 2 hours)
  • 1 pinch vanilla
  • 1 teaspoon lemon juice
  • 1 teaspoon of coconut oil for cake pan

Grind the almonds in a food processor. Drain the dates, add to the almonds and work into a consistent dough. Season to taste with lemon juice and press into the greased cake tin.

CREAM

  • 1 cup cashews (soaked in water overnight, drained and rinsed)
  • ½ cup water
  • Juice of ½ lemon
  • 2 tablespoon rice or agave syrup
  • 1 pinch vanilla powder
  • 3 tablespoons coconut oil (melted in a water bath)

Process all ingredients in a high-performance blender to a fine, creamy mix. Pour over cake base and let it set in the refrigerator overnight.

TOPPING

  • 5 or 6 apples
  • Juice of ½ lemon
  • 1 teaspoon agar agar
  • ½ teaspoon cinnamon
  • ½ cup water

Process 3 apples with lemon juice in a powerful blender to make applesauce. Peel the other 2 or 3 apples, cut into fine pieces and fold into the applesauce.

Stir agar agar into the water and simmer for 5 minutes. Stir agar into the apple sauce before the agar thickens.

Season to taste with cinnamon, if necessary add a little sweetener and distribute evenly on the base. Put the finished cake in the refrigerator for another 2 hours so the apple mixture is firm.

There’s a lot of truth in this saying, because apples contain many vitamins and minerals and have a positive effect on digestion. The soluble dietary fiber PECTIN is of particular importance.

Soluble dietary fibers have extensive health benefits:

  • They serve as food for colon bacteria and are metabolized to short-chain fatty acids.
  • Butyric acid and propionic acid in particular are the focus of current research because they help to counteract leaky gut syndrome and neurological diseases.
