Lamb’s Lettuce with Fennel, Pomegranate & Buckwheat Crunchy

Fresh Lamb’s Lettuce Salad with Fennel, Pomegranate & Buckwheat Crunchy

INGREDIENTS

For the salad:

  • 500 g lamb’s lettuce (also known as corn salad or mâche)
  • 1 fennel bulb
  • 1 pomegranate
  • 100 g savory buckwheat crunchy

For the dressing

  • 3 tbsp coconut yogurt
  • 1 tbsp light almond butter
  • Juice of half a lemon
  • ½ tsp garlic powder
  • A pinch of salt
  • Finely chopped mixed herbs (such as dill, parsley, mint)

PREPARATION

Wash the lamb’s lettuce thoroughly, let it drain well, and tear into bite-sized pieces. Thinly slice the fennel. Remove the seeds from the pomegranate. Combine everything in a large salad bowl.

For the dressing, blend all ingredients until smooth, then stir in the herbs. Pour over the salad, mix well, and sprinkle with the buckwheat crunchy. Serve immediately.

TIPS

    • If you don’t have buckwheat crunchy on hand or want to try an alternative, you can activate sunflower seeds, marinate them in soy sauce, and then dehydrate them until crispy.
    • If you’re preparing the salad in advance, store the dressing separately and add it just before serving to keep the lamb’s lettuce crisp and fresh
