Kohlrabi Apple Salad With Walnuts

Kohlrabi apple salad with raisins, walnuts and some arugula – a recipe that may make you curious. Only recently we introduced with great enthusiasm our “Kohlrabi Pasta With Cheese Sauce“. But you can’t have enough preparation options ready for this healthy tuber.

For all those who love sweet flavors, we have the right recipe for you.



  • 1 medium kohlrabi
  • 1 apple
  • 1 handful arugula
  • 2 tablespoons broken walnuts, alternatively pine nuts
  • 2 tablespoons raisins


  • 3 tablespoons coconut milk
  • 1 teaspoon date or coconut blossom syrup
  • Juice of 1/2 lemon
  • 1 tablespoon apple mustard
  • Pinch each of salt and black pepper


  1. Soak the raisins in a little water for 2 hours.
  2. Cut peeled kohlrabi and apple into spaghetti with a spiralizer.
  3. Place in a bowl with arugula, nuts and raisins.
  4. Mix all ingredients for the dressing separately, season to taste and pour over the salad. Mix together, let stand for 30 minutes and serve nicely dressed.


The tangy, slightly spicy flavor of arugula adds a special touch to this salad.

The coconut milk in the dressing is interchangeable. Coconut cream is a little thicker and creamier or almond milk harmonizes very well.
