Green Goddess Salad

INGREDIENTS

Salad:

  • 1 small pointed cabbage (or white cabbage)
  • 1 cucumber
  • 1 bunch of spring onions

Dressing:

  • 2 handfuls of baby spinach
  • 1 bunch of fresh basil
  • 1 avocado
  • 50 g cashews (soaked if needed)
  • Juice of 1 lemon
  • 1 tbsp nutritional yeast
  • 1 clove of garlic
  • A pinch of salt
  • 3–4 tbsp water (adjust for desired consistency)

PREPARATION

Prepare the vegetables:
Finely slice the cabbage, dice the cucumber, and cut the spring onions into thin rings. Place everything in a large bowl.

Make the dressing:
Add all dressing ingredients to a blender or food processor and blend until smooth and creamy. Add water gradually to reach the desired texture.

Combine:
Pour the dressing over the chopped vegetables and mix well until everything is evenly coated.

Serve & enjoy:
Enjoy the salad immediately, or let it sit in the fridge for a little while to allow the flavors to develop.

The Origins of the Green Goddess Salad

The Green Goddess Salad has its roots in the United States and dates back to a recipe from the 1920s. It was originally created at the Palace Hotel in San Francisco. Chef Philip Roemer developed the dish as a tribute to the popular stage play The Green Goddess, which was widely acclaimed at the time.

The original Green Goddess dressing was a rich, creamy blend of:

Mayonnaise, sour cream, parsley, spring onions, tarragon, lemon juice, garlic, and anchovies

This flavorful dressing was typically served over leafy greens and fresh herbs and became especially popular in fine dining restaurants.

The Modern, Viral Version of the Green Goddess Salad

The version that has gone viral in recent years is quite different from the original. It gained popularity through TikTok food blogger Baked by Melissa, whose recipe is vegan and skips the traditional mayo-based dressing.

Her dressing is a creamy blend of:
Avocado, basil, cashews, lemon juice, garlic, nutritional yeast, and spinach

The salad base usually consists of finely chopped pointed cabbage (or green cabbage), cucumber, and spring onions.
